Le Chevru cheese
Le Chevru is a soft, artisan, cows' milk cheese from Chevru in Seine and Marne in the Ile de France .region of France. Its origins date back to the early twentieth century and is produced by the Société Fromagère de la Brie. It takes the form of a thin disk 16 cm. in diameter and 3 cm. thick, weighing approximately 700 g.
It has a characteristic and developed farmyard taste, a straw yellow interior that is soft and creamy, and a white bloomy rind dotted with reddish pigments. It has a velvety texture and a mild aroma of mildew. It is matured for 3-4 weeks and has a fat to dry matter content of between 45% y 55%.
