Lammas cheese
Lammas is a Pecorino-style cheese made from unpasteurised ewes’ milk and is produced by Caws Celtica in Ceredigion.
At a month old it is creamy and moist and melts well in sauces, but as it matures it develops a pleasant lingering after taste. It is dry and crumbly and pairs well with full bodied red wines.
Caws Celtica also produce variations flavoured with caraway seeds, celery seeds, cumin seeds, mustard seeds or whole black peppers as well as a traditionally oak smoked variety.
Plain Lammas cheese is available in 4.5 kg wheels. Smoked Lammas is available in 200/300g/1kg rounds and the remaining varieties in The flavoured varieties are available in 1kg rounds.
