La Faya is a hard, unpasteurised ewes' milk cheese from Zamora in Castilla-Léon and is produced by La Faya Biológicos del Noroeste. It is a comparatively new cheese, having been created in 2006 and milk from the Churro breed of sheep is used. The sheep freely graze in the stunning scenery of the Parque Natural de Arribes de Duero, a region shared by the provinces of Salamanca and Zamora, as well a Portugal, divided (and linked, therefore) by the great flow of water which is the Río Duero.
The cheese is soft and delicate but with a pleasant, potent flavour and has evenly distributed small holes. Pale in colour, it has a delicate, yet intense aroma and has a natural, smooth hard rind which is slightly coated in mould. Of medium strength, it is matured for 3 months and weighs 500g.
