Holy Smoked cheese
Holy Smoked is an artisan, pasteurised, cows' milk cheese produced by the Godsell family in the Gloucestershire village of Leonard Stanley. It is made with vegetarian rennet. It is a version of their Single Gloucester but not traditionally matured as it is smoked and the smoke would not penetrate rind evenly. It is smoked using oak or beech chippings and is the only Smoked Single Gloucester in the world.
The cheese is matured and smoked the week before sale, as it takes a few days for the smokiness to penetrate the cheese. The smoke is not too heavy, and the cheese is not too dry. It comes in 1kg quarters.
The cheese won a Bronze Medal in the 2012 British Cheese Awards.
