Grazalema cheese
Grazalema (aka Queso de la Sierra de Grazalema) is produced from unpasteurised ewes’ milk or a mixture of ewes’ and goats’. It is produced in the Cádiz province of Andalucía.
The cheese is seasonal and is mainly produced between late-winter and midsummer. It is matured for about a month and a half and is shaped into large cylinders weighing between 1 and 3.5 kg. The orange rind is sticky and the yellow interior is compact with a few small, irregular holes.
Having a strong, slightly spicy, very greasy, slightly salty flavour the cheese can ideally be served with good bread and a cool, fruity, young, red wine.
