Fougeru cheese

Fougeru is made from unpasteurised cowsmilk in the Centre region of France. It is matured for 30 to 60 days, comes in cylinders weighing 500g or 1kg, and has a bloomy, white rind. The interior is white, soft in texture and slightly sweet tasting with a somewhat salty overtone. The cheese has a fern leaf placed on top of the rind. It is related to Coulommiers cheese and has a similar appearance and flavour.
