Formentera cheese
Formentera is an incredibly tasty unpasteurised goats’ or ewes' milk cheese from the Balearic Island of the same name. It is a scarce product that is still made by peasant women using artisan methods. Production is very small and basically done for self-consumption. The milk is curdled with thistle flower which is known as “l´herba de formatjar” (the cheese herb), manually pressed and salted when dry.
There are two types of cheese. Fresh cheese with a maturation period of no more than ten days and cured cheese which matures for over thirty days. The thistle flower must be collected and this is always done on Sant Joan (Saint John’s) day- the flowers are collected, left to dry and stored so they are available throughout the year. Once the thistle flower has been collected, it is placed in a container with water all night long to soften. Then it is ground and the juice is extracted and mixed with the milk in order to make cheese.
