Formaggi caprini della Maremma is a fresh cheese made from goats' milk produced in the area of the Priorato and Parrina in the Tuscan province of Grosseto. The milk is subjected to pasteurisation at 72°C for 30 minutes, then animal rennet is added for the formation of the curd.
It is a flavour added cheese and can be coated in ash or contain pepper, chilli, chives, garlic, sesame, mint, oregano, chopped almonds, or basil. The shape can be cylindrical, pyramidal or other shape. The paste is white, soft and creamy and the flavour is delicate and slightly sharp. The aroma is very strong and it changes depending on the added ingredients.
