Chanteron cheese
Chanteron is a soft ewes' milk cheese, produced in the village of Bayons, 35km from Sisteron in the Alpes de Hautes-Provence département of Provence-Alpes-Côte d'Azur. It was created in 1988.
It is a slow curdling cheese which is ladled into moulds. It can be consumed fresh or left to mature for 2-3 months, in which case it will develop a bloomy white rind. It comes in 3 weights: the tommette (150g), the petitome (80g) and the agnelet (40g).
