Cacio a forma di limone cheese
Cacio a forma di limone is an unpasteurised ewes' milk cheese which is produced in the valley of Metauro in the Marche region of Italy from April to September. It takes its name from the fact that it is moulded in lemon-shaped terracotta moulds and that it is brushed with a mixture of flour, water and lemon peel. It is matured for 4-10 days and weighs 100-150g. It is a fresh, white cheese with a lemony flavour.
