Bedón Vaca cheese

Bedón Vaca is a mild, semi-hard, pasteurised cows' milk cheese from the Quesería de Bedón in Frieras, (Posada de Llanes) in the Asturias. It takes its name from the Bedón river which flows beside the monastery of San Antolin, in the small town of the same name.

Both the rind and the body of the cheese are a uniform straw yellow and has a few small, regular holes. It has a clean, fine, slightly gritty texture and is moderately moist to the touch, with a certain amount of elasticity. It has a harmonious lactic aroma and a smooth, pleasant, lingering aftertaste.

The cylindrical cheese has a natural rind and matures for 15 days. A goats' milk and a mixed milk version is also available.
