  • Preheat your oven to 220Β° C (425Β° F - gas 7)

Method

  1. Chop the leeks into rounds and fry them until softened in olive oil
  2. Meanwhile boil the potatoes for 15 minutes or until soft
  3. Mash the potatoes together with the soured cream
  4. Stir in the leeks and season with kosher salt and black pepper
  5. Spread thinly onto a backing dish and fluff with a fork
  6. Distribute the meat, cheese and tomatoes evenly over the mashed potatoes
  7. Bake for 35 minutes as 220Β° C (425Β° F - gas 7)
  8. Serve immediately
