Aracena cheese

Aracena is a hard, washed-rind, unpasteurised, goats’ milk cheese from the province of Huelva. It is one of a few goats’ milk cheeses produced in Spain's southwest, where ewes’ milk cheeses are much more prevalent.

The white cheese has a moist texture, a strong earthy taste and is matured for 70 days. It is available ‘natural’, and flavoured with ‘fines herbes’, rosemary or paprika.

This cheese which recently won first prize in an Andalúz food competition, is ideal to eat alone or with honey or marmalade. Aracena is also known as ‘Queso de la Sierra de Huelva’, ‘Queso de Andévalo’ and ‘Queso Añejo de Cabra’.
