Roche fontaine cheese is produced in Burgundy by Philippe Aubertin. It is produced from cows’ milk and is cylindrical in shape. It is very creamy and either comes as plain, or washed in Marc de Bourgogne. The plain variety has a white, bloomy rind, whereas the washed version has an orange-brown rind with a light sprinkling of mould.
