Flattening chicken breasts so they cook quickly and evenly
This is a useful technique for ensuring chicken breasts cook quickly and evenly. You may have seen Jamie Oliver use this in his recent 15 minute meals series. It's very easy to do and produces excellent results.
- Lay the chicken breasts on one side of a silicone baking sheet
- Season both sides with salt and freshly ground black pepper and fresh herbs if using them
- Fold the baking sheet over and bash with a rolling pin until the chicken is nice and thin and has an even thickness
- Do ensure that you wash everything properly afterwards, ideally in a nice hot dishwasher!

If you need to marinade the chicken for your recipe, a really quick and easy method is to pop the chicken and your marinade ingredients into a Lock & Lock box together with the flattened chicken breasts, shake the box like mad for 20 seconds and refrigerate for a few hours.
Silicone baking sheet as reusable greaseproof
Jamie uses greaseproof paper, I find a silicone baking sheet is good for this and far stronger than greaseproof paper. Do ensure that you wash everything properly afterwards, ideally in a nice hot dishwasher!
