Method

  1. Mix the apple juice and the vinegar with the salt and pour over the leaves.
  2. Just before you are ready to serve, mix in the pumpkin seed oil.

Chef's notes

Pumpkin seed oil can be obtained from Kipferl. Stone pine vinegar is an Austrian speciality and I do not think it can be bought in the UK. From what I can work out, it is mixed with apple (cider) and red wine vinegar, so use a mix of these two vinegars instead.
