Formaggio di colostro ovino cheese
Formaggio di colostro ovino is an unpasteurised Sardinian cheese produced from the colostrum milk of ewes and therefore can only be obtained for 4-5 days after the birth of a lamb.
It is a Ricotta type cheese, which is immersed in brine for 24 hours, then dried for 4-5 days, when it will be ready for consumption, although ideally it should be eaten at about 7-8 days. However, it can be frozen.
Traditionally produced for home consumption it is now made by mini-dairies which meet food hygene regulations and sold to the general public.
