Caprino di Demonte cheese

Region: Piemonte

Milk: Goat

Raw material: Whole goats' milk, pepper, hot pepper, olive oil, liquid calf or kid rennet.

Characteristics: Flattened, cylindrical form with flat faces 8-10 cm in diameter and slightly convex sides of 1-2 cm. Weight varies but generally around 100g. The mature cheese has a thin, white rind. The cheese is white, soft and firm.

Production area: Valle Stura di Demonte (Stura di Demonte river valley), particularly Demonte (Cuneo).

Production technique: The raw milk is heated to 18-20Β°C, adding calf or lamb rennet. After coagulation, the curds are placed on tiles or hempen cloths, once shaped into round forms.

Maturing: The cheese can be eaten fresh or aged for 30-50 days. During this period, the cheese is sometimes steeped in oil, pepper or hot pepper.
