Pecorino Carmasciano cheese
Pecorino Carmasciano is a hard, ewes' milk cheese made with gost or lamb rennet in the municipalities of Rocca San Felice, Sant'Angelo dei Lombardi and Guardia dei Lombardi in the province of Avellino situated in the Italian region of Campania. It has a hard, reddish rind and a straw coloured interior with shades of pink. It has a tangy flavour which becomes spicy with age. Cylindrical in shape, it has a height of 8 to 10cm and a diameter of 16 to 20cm. It is produced from the end of winter to summer and is matured in cellars on wooden boards for 6 months. It is then stored in oil in clay pots.
