Cardabelle cheese
Cardabelle is an unpasteurised ewes' milk cheese and takes its name from a type of thistle endemic to Causses, which is used to coagulate the milk. It is produced in the Languedoc-Roussillon of France and is also produced with added rosemary and thyme.
It has a slightly bloomy white rind and a smooth, creamy, soft interior with an aroma of raw sheep milk. It is shaped like a small brie and weighs approximately 1.3 kg.
