Chile New Mexico red

The New Mexico chile is a local cultivar of the species or subspecies otherwise represented as Anaheim peppers. The large, flavourful New Mexican variety gives the region's cuisine much of its distinctive style, and is used so extensively that it is known simply as "chile".

Strength and flavour

  • Heatscale: 3/10
  • Flavour: mild sweet clean heat with fruity flavours
  • Uses: classically used in red chilli sauces; also good to crush and sprinkle on foods
