Terschelling cheese
Terschelling is a semi-hard, pasteurised ewes' milk cheese, produced by Yolanda and Gerben Bakker on his farm in the small island of Terschelling in the north of Holland. They are about 120 sheep which produce organic milk which is processed into cheese, yogurt and ice cream.
Matured for 4-6 months and made with vegetarian rennet Terschelling is cooked and pressed and has a natural rind. The strength varies from mild to medium and has a slight flavour of slightly caramel with hints of fenugreek seeds, with a hint of nuts.
Like all Gouda type cheese Terschelling increases both its flavour and aroma with maturation.
