Serra da Estrela cheese

Serra da Estrela is an artisan, DOP, ewes’ milk cheese which has been made for centuries by shepherds in the Serra da Estrela Mountains in Beira. It is known as the ‘King of Portuguese Cheese’.
To make the cheese, the milk is curdled by a rennet of cardoon flowers or lambs’ rennet and the curds are broken up manually. Soft and almost spreadable, the white cheese has a smooth, thin, straw-coloured rind and an unmistakable aroma and flavour. It has a clean, perfumed bouquet, and a sweet, burnt toffee finish.
The cheese is soft and cylindrical with slightly bulging sides and a stronger, harder and crumblier version is also available. The soft variety is only produced in autumn and winter. It can weigh between 1 and 2 kg, is 25 cm in diameter and is 5-7 cm high.
