A nice blue cheese salad dressing that works really well poured over a crunchy leaf salad; it also compliments a bitter leaf salad well too. This quantity will easily dress a salad for 4 to 6 people.

Method

  1. Using a small electric mixer, combine the olive oil and lemon juice. If you can get it too a mayonnaise consistency, then you've done very well. Not essential though.
  2. Crumble the cheese into the mixer
  3. Add the honey, yogurtand seasoning
  4. Blitz until the dressing is smooth and without lumps
