Rodoric cheese
Rodoric is made from unpasteurised goats’ milk and is traditionally matured in humid caves. The production process is very similar to that of Maroilles or Herve cheese, but the use of goats’ instead of cows’ milk makes it unique.
When young, the cheese is sweet, but with age the flavour becomes spicy. Because it's so strong, Rodoric is best eaten with dark breads and beers.
Rodoric comes from the region of Liège and is often regarded as quite rare even in Belgium.
