Piacentinu cheese
Piacentinu is a hard, ewes' milk cheese from Enna in Sicily and surrounding areas. It is produced almost exclusively to order, using traditional techniques with old tools. Lamb rennet is used and saffron is added to the milk. The curd is placed in rush baskets to drain and black peppercorns are mixed in with the curds. The cheese is matured in natural caves for 6 weeks to more than 4 months.
