Pecorino della Garfagnana cheese

Pecorino della Garfagnana is a Tuscan cheese produced with whole ewes' milk, typically from Massese breed of sheep. It has a cylindrical shape with a height of 7 to 12cm and a diameter of 18-22cm and weighs 1.8-3kg. The rind is yellow to brown, depending on the maturity and the interior is straw-coloured. It has a sweet flavour with a hint of spice. It is made from February to August in the province of Lucca, which includes the middle and upper course of the Serchio (Garfagnana in practice), and is also produced in the Apuan Alps and Lunigiana. It is matured for 60 to 90 days in a well ventilated area.
