Pecorino Bagnolese cheese
Pecorino Bagnolese is hard ewes' milk cheese produced in the municipalities of Bagnoli Irpino, Chiusano San Domenico and Volturara Irpinia in the Italian region of Campania. It has a hard and firm rind which is pale yellow to dark brown and a fatty, straw colored interior. The flavour is spicy in the more mature cheese. It is consumed cut or grated to season pasta.
