Moulis Crémier cheese
Origin
- Also known as Le Moulis this is an artisan cheese produced in a well established family business in Moulis, in the arrondissement of Foix in Ariège. Each year they produce 60 tons, ie about 17,000 cheeses.

- Strong aroma, becoming more pungent with age. Stings the tongue.
Strength and texture
- Strong. Young cheeses are matured for 2 months and older ones for 6 months. Moist, fatty texture, with several holes. Natural mouldy rind which shows the marks of the cloth in which it was wrapped.
Shape, weight and size
- Produced in wheels, this cheese measures 22-24cm in diameter, 7cm height and weighs 3.5kg.
Description
Initially straw coloured, the cheese becomes browner as it matures. Whilst maturing, it is washed in brine every two days during the first two weeks, then it is brushed and turned for one or two months.
