Marzolino di Lucardo cheese
Marzolino di Lucardo is a Tuscan, semi-soft, ewes' milk cheese produced in the territories of Lucardo, Barberino Val d'Elsa, Montespertoli, Certaldo, San Gimignano and in general in the Val d'Elsa, Florence and Siena.
It has a creamy white colour, intense aroma and a delicate flavour. It is packed in baskets and sizes vary from 3 to 3.5 kg. It is produced by mixing milk with vegetable rennet and salt. The milk is heated for about 3 hours. After coagulation, the curd is removed and the whey is left for the production of cottage cheese. The curd is then soaked in cream and wrapped in fine cloths, which are in which some holes are made with a wooden stick to release the whey. To facilitate complete expulsion of the liquid, it is pressed with both hands, draining the excess whey. The cheese is then wrapped in hemp cloth and hung for about 24 hours at constant temperature for fermentation and drying. After this, the cheese is hung in a room at a height of 50 cm from the ground in order to benefit from the right level of humidity. For 8 days the cheese is turned daily, rubbed with olive oil and left in this environment for 30-40 days or so, until it has the right texture.
