Mise en place

  • Pre-heat the oven to 180° C (350° F - gas 4), [fan oven 160° C]

Method

  1. Score the top of the ham in a diamond pattern
  2. Cut a large pocket in the meat directly under the top, cutting from the side
  3. Season the inside of the pocket
  4. Stuff the pocket with the apple, onion, prunes and parsley
  5. Fasten the opening with cocktail sticks or skewers
  6. Place in a roasting tin and roast for about 40-50 minutes (or until the internal temperature is 68° C - it should come up to 71° C after resting)
  7. Remove the meat and wrap in foil to keep warm
  8. Pour off the excess fat
  9. Stir the stock into the pan and blend with the pan juices
  10. Serve with the gravy
