Formaggio di S. Stefano di Quisquina cheese
Formaggio di San Stefano di Quisquina is a cheese from Sicily. Its shape is cylindrical with a concave upper surface and the rind is pale straw-white in colour. The artisanal nature of the product means that the size and height of the cheese are variable.
The cheese is made in several stages. The fresh milk is filtered and placed in a wooden 'tina' in which lamb rennet is added for coagulation. After about 30 or 40 minutes the coagulation process is complete and you have the curd, which through the use of a particular tool and the addition of hot water is broken up into small granules. The curd is separated from the whey and smoked for which it is placed in baskets of rushes. The whey is placed in a special container made of copper for the production of ricotta. The 'tina' is carefully covered to prevent a drop in temperature to ensure the proper smoking of the cheese. The smoking phase lasts on average 3 to 5 hours depending on the size of the cheese.
The cheeses are matured in very fresh rooms, a necessary condition for optimum storage and ripening, especially in summer.
