Doolin cheese
Doolin cheese is made in Ireland by a group of small cheese producers who make the cheese according to a specific standard. It is made with cows’ milk from specific herds. It is matured for 8 to 12 months, depending on the desired texture and flavour.
The cheese is dipped in a brine solution before being encased in yellow wax. It is a buttery colour on the inside and is encased in a thick, waxy rind that is used to keep the moisture levels balanced during maturation. The cheese has a wheel shape and is vegetarian.
There are three versions of this cheese Young Doolin, which is sold only after two months, Mature Doolin that has a more distinctive fruity character and Vintage Doolin with fine grainy texture and buttery flavour.
