Doña Manuela is a semi-soft unpasteurised goats' milk cheese produced by Maria del Valle Jiménez Falla of Quesos Doña Manuela in Sierra de Aracena in the province of Huelva. It is named after the previous cheesemaker, Doña Manuela who left the business in the hands of her son and Maria del Valle.
It is an artisan cheese made with animal rennet, and has a pretty orange rind tinged with white mould. It has a goaty aroma and a straw coloured interior. The texture is buttery and tender. In spite of its intense and aromatic aroma, the cheese is only of mild to medium strength. It has a good balance of salt, due to its being salted by hand and not immersed in brine. It has a slightly spicy finish.
The cheese, which is matured for 3 months, is available plain or with added ingredients, such as paprika, rosemary or black pepper.
