Castell de Morella is a mild to medium, semi-soft, goats' milk cheese produced by Quesería Catí, which is situated in the village of the same name in the province of Castellón, Comunidad Valencia.
It has an original and attractive truncated pyramid shape with a weight of 500 gr. The interior is ivory white and the rind is rustic and mouldy. Its aroma is not very intense, with hints of wine and mushroom. The texture is somewhat elastic, without holes, creamy and envelopes the palate. The flavour is slightly sweet and slightly salty, reminiscent of nuts, with a long aftertaste. Matured for 30 days, it has a fat in dry matter content of 45%.
