Bertelin White Derby cheese
Bertelin White Derby is produced by the Heath family of Bertelin Farmhouse Cheese Company at Ellenhall Grange Farm near Eccleshall in Staffordshire. It is made from pasteurised cows' milk from their own herd of Friesian cows and vegetarian rennet.
The cheese goes through a cheddaring process but it is not a Cheddar because lower temperatures are used on the curd causing it to retain more moisture. It is creamy and sweet, pale in colour, with a creamy texture. The cloth bound cheese is matured for 7 months allowing it to form a natural rind. It takes its name from St Bertelin, the founder of Stafford.
