Payoyo is a hard, organic goats' milk cheese produced in the village of Villaluenga del Rosario (Cádiz). It is named after the breed of goat whose milk is used to make the cheese. These goats live in the mountains that surround the village, which makes them have a varied diet each year due to the rugged territory. If there is a drought, the flavour of cheese the following year will be very acidic and if the weather is more humid the goat will eat more green foliage and the flavour of the cheese therefore will be softer. Quesos Artesanales de Villaluenga has been producing the cheese since 1997.
For conservation, the cheese is covered with lard, if it is to be matured, or in paprika, if you want it young. Both ingredients are natural preservatives which prevent oxidation and external attack of insects. Of medum strength, the cheese is normally matured for 2-3 months. It has a natural rind which is shows markings of esparto grass.
On the palate, the cheese is balanced and complete with an intriguing flavour; moist and fresh, floral aromas with hints of hazelnut and caramel, white chocolate and sage. The salt level is balances and it melts in the mouth. This cheese is very fatty with an extraordinary flavour and consistency.
