Roves des Garrigues cheese

Roves des Garrigues is named after the breed of goat from which the milk is derived - the Rove - and the place where the animals graze - Garrigues - in the Gard département of Languedoc-Roussillon. It is essentially a fresh cheese with a natural rind. The vegetation upon which the animals graze offers an immense amount of flavour for a younger cheese. The flavuor of thyme, laurel, fennel, lavender, citronella and other herbs of Garrigues give accents to the flavour of this little semi-soft cheese.
