Zamorano cheese is one of the most popular in Spanish cuisine. It is protected by its 'Denominación de Origen Protegida'. It has a look and smell of the fields of Castilla-León and is a cheese from the milk of traditional breeds of sheep Churra and Castellana. Zamora is the top province in Spain for sheep's milk production yielding 18% of the national total. Cheese production in Zamora is estimated at around 300,000 kg per year.

Queso Zamorano

The cheese can weigh up to 3-4 kg, and is matured in caves for 5-9 months. During that time, it is turned and rubbed with olive oil. It has a strong smell and flavour of sheep’s milk and the taste lingers on the palate. It has a cylindrical shape and a textured rind.

It is a cheese that is usually served with local wines from the area, such as those from the 'Denominación de Origen Protegida' Toro or the Ribera del Duero. It is usually cut into triangular slices of about 3 to 5 mm thick which are laid out on a plate, sometimes accompanied by fresh quince. Often it is served with grilled meats.

The cheese, with or without DOP can be ordered on line from Wine&Ham . They are a UK based company but all orders are despatched from their Seville warehouse and payment can be made in either Sterling or Euros.
