Roquefort salad dressing
A nice blue cheese salad dressing that works really well poured over a crunchy leaf salad; it also compliments a bitter leaf salad well too. This quantity will easily dress a salad for 4 to 6 people.

Ingredients

- Half a packet of Roquefort blue cheese (65 to 75 g)
- 150 ml (1/4 pint) plain natural yogurt
- 3 tablespoons olive oil
- Juice from half a lemon
- 1 teaspoon of honey
- Ground black pepper
Method
- Using a small electric mixer, combine the olive oil and lemon juice. If you can get it too a mayonnaise consistency, then you've done very well. Not essential though.
- Crumble the cheese into the mixer
- Add the honey, yogurtand seasoning
- Blitz until the dressing is smooth and without lumps
