Ricotta Testa di Morto cheese
Ricotta Testa di Morto is produced with the whey from ewes' milk on the island of Sardinia. Matured for 20-30 days, it has a very thin rind, almost absent. It is white and has a firm, but tender texture. It is produced from November to July in the whole region, and is used as a table cheese. Each cake shaped cheese weighs 1.5-2kg.
