Peretta cheese
Peretta is a spun, cows' milk cheese from the Nuoro province of Sardinia and also Berchidda and Porfugas in the Sassari province. It is produced throughout the year, both artisanal and industrial, with milk from animals raised on pasture or in free stabling. The characteristic shape is a typical "pear" with a head, and has a golden, glossy, thin rind and a straw-coloured paste which is elastic and uniform, with a sweet and delicate flavour. It matures for 2-7 days and weighs between 500g and 800g.
