Callu de cabreddu cheese
Callu de Crabettu is a hard, goats' milk cheese from Sardinia which is produced in the primitive fashion of our ancestors, by the shepherds of Nuoro. Rindless, it is encased in the stomach of a baby goat. It is made from the last milk of a lactating goat and is curdled by the acid from the stomach and one could say that this is the only case in which the milk is added to the curd and not vice versa. The local custom is to eat it (including the stomach wall acting as a 'rind') with sliced bread , or sliced, fried in lard. It is produced in spring or summer when the kids are born. The cheese, which is not salted, matures for 2-3 months. The flavour is intense, almost spicy and very tasty and is pale yellow, granular and compact.
