Tome d’Arles cheese

This farmhouse cheese was originally produced in the village of Montlaux in the Alpes-de-Haute-Provence département of France, but production ceased for several years. In 1988, two women resumed production with the milk from their 60 ewes.

The cheese is soft and mild, with a short maturation period of 10 days. It has a typical flavour and a natural bloomy rind. The size of the cheese varies from 8-9cm in diameter, and has a height of 1.5cm. It weighs 90-110g and the best time to eat it is from winter to summer.
