Ossau-lraty cheese
Ossau-Iraty is produced in the south-western France, the Pays Basque in the Pyrénées-Atlantiques département and Aquitaine. It has been recognised as an AOC cheese since 1980 and also has the AOP seal. It is produced from the milk of Manech sheep, a breed used soley for the production of this cheese. The cheese is made from late December, after lambing, until mid-July.
Description
Ossau-Iraty is rather medium-soft, light in colour and has very complex yet delicately smooth flavours. This cheese tastes slightly akin to cows' milk cheeses of similar texture such as alps cheese. Ossau-Iraty is complex and includes an edible slightly white-mouldy tart rind which adds considerably to the experience. This is a creamy, not bitter, not overly sweet, perhaps slightly nutty cheese with a gentleness and ability to please. Finishes rich and smooth.
It is safe for those who are lactose intolerant.
