Los Montes de San Benito is a semi-hard, artisan, vegetarian, ewe’s milk cheese produced in Andévalo y the village of Guzmán, in the province of Huelva. Production had almost died out but has been recently revived.
The hand-made cheese has a strong oily taste, although the aftertaste is mild and tangy. It has quite a strong aroma of fungus and clean wool.
Taking 2-4 months to mature, the cheese is cylindrical in shape with grooves, rather than the more traditional plaits in its wrinkled, orangey-white rind. The yellowish-white interior gets darker towards the rind and has a small number of holes. Each cheese weighs around 500 g.
