Quick fruit jam

Servings:Makes about 1½ standard pots
Ready in:25 minutes (includes 15 minutes resting time)
Prep. time:20 minutes (includes 15 minutes resting time)
Cook time:5 minutes
Difficulty:Easy

This is a modernist jam which uses agar agar to set it. However, it does not have the keeping qualities of standard jam so it is best to make it in small quantities.

Method

  1. Mix the fruit with the sugar in a saucepan and leave for 15 minutes
  2. Stir in the agar agar
  3. Bring to the boil and cook for a minute, then remove from the heat
  4. Transfer to hot or warm, clean jars, before it has a chance to set in the pan
  5. Once cooled, keep refrigerated even if unopened
