Évora cheese

Évora cheese

Évora is a semi-hard or hard unpasteurised ewes’ milk cheese which takes its name from the capital of the province of Alto Alentejo, about 150 km east of Lisbon.

The interior of the cheese has a yellowish colour, which becomes darker when exposed to air, and a light yellow rind. It has a creamy, salty, flavour with an acidic aftertaste. As it matures a stronger taste of sheep develops.

Weighing only 100-150 g the cheese is also known as Queijinhos do Alentejo and they are sometimes preserved in olive oil.
