Turkish food has influenced the cuisine of many countries due to the expansion of the Ottoman Empire into Eastern Europe, North Africa, Cyprus and Russia. However, Turkish food has itself been influenced by several ethnic cultures such as Byzantine, Armenian, Kurdish, Arabic, Jewish and Persian. Like Middle Eastern cuisine, there are no pork recipes or any that include alcohol.

PDO ingredients
PDO stands for 'Protected Designation of Origin'. Under the EU agricultural product quality policy, this "covers agricultural products and foodstuffs which are produced, processed and prepared in a given geographical area using recognised know-how". KCG ingredients
KCG stands for 'Korunmuş Coğrafi Gösterge' which means 'Protected Geographical Indication'. Under the EU agricultural product quality policy, this "covers agricultural products and foodstuffs closely linked to the geographical area. At least one of the stages of production, processing or preparation takes place in the area." The following Turkish ingredients are those which are registered as KCG.
