Sierra de Sevil cheese
Sierra de Sevil is produced by Quesos Radiquero from pasteurised goats’ milk in Somontano in the province of Huesca. They are hand-made and the goats feed on shoots, fresh grass, berries and wild fruit in the Sierra de Sevil.
It is a pressed cheese, without holes which is matured for between one and two months. It has a mild flavour and aroma, which develops on the palate with a touch of acidity. In 1990 it won the Gold Medal at the International Food Fair in Bilbao. It comes in cylinders of 500 g, 1 kg and 2.5 kg and is also available in jars of olive oil.
